The thing I most appreciate about Mac this month, is his love of family.

The end of October beginning of November starts up hockey season around here, and for the last few years Mac has been in a league playing with his Dad. They will go out and open skate about 2 or 3 times a month to practice and then every week they play against other organized teams in a league.

I will  also get a random note or text from him on days when he is off and I’m at work saying he is going to take his mom out for lunch. They normally go to the Korean Deli, and this is normally in the summer when she is off from work, but it melts my heart when he does it.

We also go to their house every 6 or so weeks for dinner and baseball/hockey game on TV. We just hang out, watch the game, and enjoy each others company and I love it.

I miss hanging out with my family but I’m glad to know that Mac has the same love of family that I do.

Las Vegas Paintball 2011

Well as I’ve mentioned a few times now I just got back from yet another paintball trip last weekend. this one was in Vegas and the city and the teams were great, however the hotel itself was severely lacking customer service…as in I had a reservation (that took 3 phone calls to make and over 45 min on hold) for a non-smoking room. Upon arrival I was told there were none left…really!?!? Trust me there were plenty other ridiculous moments but we won’t harp on them. Now we will move on to some photos!

 Just for fun I decided to pick my 2 favorite photos that Mac took!

 Oh and P.S. Don’t stay at the Riviera Hotel, I e-mailed them yesterday with a list of 5 distinct complaints and haven’t even gotten a confirmation of receipt.

Healthy Report Card: November Week 3

Hey all,

I’m so excited to be done with piantball for the season so I can stop making excuses but unfortunetly untill this round of photos are edited….

However I did get to cook a few meals this week and that is always a good thing.

I tried a recipe I found in my All You Magazine Toad in a Hole, apparently its an English thing but I liked it and it was easy to 1/2 for our family of two. One of the best parts is you don’t need much to make it, eggs, mustard, brats, onion and milk.

  • 8 chicken or turkey sausage links (about 1 lb. total) ( I used Johnsonville Turkey Brats)
  • 2 onions, quartered
  • 2 tablespoons olive oil
  • 2/3 cup all-purpose flour (I always use un bleached flour, its not organic but hey…)
  • 1 teaspoon salt
  • 2 large eggs
  • 2 teaspoons grainy mustard
  • 1 1/4 cups low-fat milk (I’ve just discovered the amazingness of almond milk!)

 

Preparation

 

  • 1. Preheat oven to 475ºF. Place sausages and onions in a 9-by-13-inch baking dish and toss with oil. Bake until lightly browned, turning once, about 10 minutes.
  • 2. While sausages are baking, whisk flour and salt in a large bowl. Whisk together eggs, mustard and milk in a large measuring cup, add to flour mixture; whisk until smooth. Carefully pour batter into baking dish with sausages and continue to bake until puffed and golden, about 30 minutes longer. Let stand 5 minutes and serve.

It smelled so good we dug right in and I forgot to take the picture, it was delish but FYI the biscut part dosen’t re-heat well.

Thoughts on Thursday…on Friday: The mundane things are the best things.

So I was thinking about the times recently that I’ve most enjoyed being with Mac and surprisingly it wasn’t the big things, the dates or the trips for paintball (yes those were fun.) We all know we need to ‘date’ our spouse when we can but I also don’t want to take for granted the everyday things.

I like cooking with him, putting away the laundry and talking. Watching The Sing-Off and sharing our thoughts about the groups. I enjoyed working on our roof together and learning what we were made of! These everyday things are the majority of our marriage so don’t forget about them!

Next week is the first Husband Challenge link up party I can’t think of a better day to start it than on Thanksgiving, and I didn’t even plan it that way! So get your lists together, what did you notice, learn, appreciate about your husband this month?
