My Memories Software Giveaway

I was so excited to get an e-mail from Liz to try out and giveaway the My Memories Software. I love photos and scrapbooking but I haven’t had the time lately. Plus the software I was going to download is no longer available for Macs but this is!

No joke I downloaded the software and was using it in minutes. After the first night I had designed a 4×6 ‘album page’ to use as our Christmas Card. Its so intuitive.

The thing I most appreciate about Mac this month, is his cooking/cleaning.

The ‘problem’ with our Paintball photography business is that its a side business. I don’t have days to commit to photo editing, communications and all that goes into making it happen. Mac helps so much with this by helping out around the house and relieving that stress so that I can focus and get the photos done. Not only does this help the house stay clean it helps me stay sane!

I’m also lucky that he can cook, I’m not talking grill (although he is pretty good at that) he can actually cook. Most of his dishes have an Asian flare (makes sense since he is 1/2 Korean and lived there till he was 8 ) or are on the spicy side, and that is a perfect balance to my Midwest cooking.

We are a great team, sometimes I stress myself out I put too much pressure on myself to do everything, RIGHT NOW!!! If I just remembered that we are a team, well life would be so much simpler!

Individual Oreo Cheesecakes, Lactose Free!

Hey guys here is my weekly recipe  for the Holiday Sweet Swap, only one week left so remember to head on over and post your recipe or just checkout all the ones that have been posted.

For our wedding we had a cheesecake reception. For about 2 months before the wedding I was cooking and freezing cheesecakes for our reception but for us we had one made out of lactose free cream cheese. We had it made at a place in town here Muddy Paws Cheesecake Factory.  It was amazing!! They warned us it was similar to using regular cream cheese but NOT to make just a plain french vanilla cheesecake it needs a little something to make it ‘normal’ tasting.

So when I saw this recipe on pintrist for Individual Oreo Cheesecakes I knew I had to try it with Tofutti.  I found the recipe on Cate’s World Kitchen and it was delish. However I will say the tops of mine looked a little glossy, I’m not sure if this is because the tofutti or from being refrigerated too long without being covered, but they taste just fine!

Oreo Cheesecake Cupcakes

 

Ingredients

  • 22 Oreos: 16 left whole, and 6 coarsely chopped
  • 2 8-oz packages cream cheese, at room temperature (Neufchatel is fine)
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
  • 2 large eggs, room temperature, lightly beaten
  • 1/2 cup sour cream
  • Pinch of salt

Instructions

  1. Preheat oven to 275 F.
  2. Line 12 standard muffin tins and 4 ramekins (or 16 muffin tins, if you have them) with paper liners.
  3. Place 1 whole Oreo in the bottom of each lined cup.
  4. Beat the cream cheese in the bowl of a stand mixer on medium. Gradually beat in the sugar and vanilla.
  5. Pour in the beaten eggs, a little at a time, scraping down the sides of the bowl after each addition.
  6. Beat in the sour cream and salt.
  7. Stir in chopped cookies by hand.
  8. Pour the batter into the prepared tins, filling each almost to the top.
  9. Bake, rotating pan halfway through, until filling is set, 22-25 minutes.
  10. Cool in the pans for about 15 minutes, on a wire rack, then transfer to a plate in the refrigerator for at least 4 hours.

I didn’t have enough liners so I just made a few right in my silicone muffin pan:

I’m saving the ones in the cupcake liners for Christmas with Mac’s Family since some of them are lactose intolorant as well so you get the ugly, made without the liners for your picture.

5k Training: Dec Week 3

Another semi-busy week although not as scheduled as last week I’m back to photo editing from a paintball tourney this past weekend. The problem with editing is I sit on my butt either at my desk or in front of the TV for hours and have no activity at all. Plus I have a crazy desire to snack the whole time :(

I need to get the snacking back under control, but other than that I’m still doing pretty good. I’m setting the timer when editing and getting up every hour or so to do something other than sit.

Goals from last week:

Monday- I did my outside run, I ran 2.2 miles in 20:37 which is about 6.4 MPH

Friday- I ran 2.64 miles on the treadmill in 29.44 so thats around 5.45 MPH.

Saturday- I ran 1.69 miles in 18:00 flat so that is 6.67 MPH.

I did pretty good with my no caffeine rule, had a few sips of pop one night when I started to feel a little nauseous because I hadn’t eaten enough and delayed dinner too long. You know the feeling? You feel sick because you didn’t eat and then you feel too sick to want to eat? Yeah that. Then another day I had a chai latte but that is WAY better than pop, so hey.

I noticed that the 6.64 MPH run was hard, I’m not sure if it was because I ate only 50 min before I ran (not smart) or if it was a ‘in my head’ thing. I find that most of my workout drains are in my head and not really my legs….I need to work on that.  Mind over matter right?

 

Goals for this week:

1x @ 2.0 Miles No Less than 5.5 MPH (Gym)

1x @ 2.5 Miles  No Less than 5.4 MPH (Outside)

1x @ 2.8 Miles No Less than 5.0 MPH (Gym)

1x @ 1 miles Pushing it the whole time (Outside)

I want to cut out pop entirely this week even the caffeine free, who needs the chemicals right?  I don’t drink much (maybe 2 a week) but I find myself craving it more. I also want to cook at home Mon-Friday next week, I have no reason not to, I’m purposefully not planning anything this week except the gym.
